Place your brulee in tray and put in oven. Then pour enough boiling water into the roasting pan to reach halfway up the sides of the Ramekin dishes. (this is a trick so you don’t have to try to carry a tray of boiling water!) - Bake in preheated oven for 20-25 minutes or until just set. It should still have a slight wobble in the center.
- Carefully Remove from oven. Set aside for 20 minutes to cool. Place in fridge to chill. You could get away with cooling it in the fridge for 20 minutes, but it can be left in the fridge for a day or two.
- Sprinkle the Brulee evenly with sugar. Use torch on sugar until sugar bubbles and caramelises. Serve immediately.
